For dinner tonight, my host mother served a dish of white beans, onions, tomatoes, tuna, and egg. My roommate and I had both never seen a dish like this but was excited to try it since our host mother’s cooking has been quite delicious every time. We were pleasantly surprised when we discovered that this bean dish was very delicious. She mentioned to us that it was a traditional dish in Catalan. When I looked it up, I learned that you can get it as a tapas dish, which are basically like small appetizers, and is called empedrat in spanish. I am so excited to have this dish hopefully again and to be able to recognize it at a tapas restaurant and let my friends know it is a delicious dish to get.

Another amazing day trip to a the city that is known for being the set of Game of Thrones. The old city was absolutely amazing to explore. The highest point was breathtaking and if you couldn't tell, an amazing photo spot. To end the day, we were able to try a 3 Michelle star ice scream shop. I personally got a peach bear shaped popsicle.
Our explorations took us to the Passeig de Luis Companys and the Citadel Park that is home to one of the most glorious fountains I have ever seen. My friends and spent quite a few minutes enjoying the warm sun and taking some nice photos for our parents.
On only our second day in Spain and we have already had our first day trip to the most beautiful city, Besalú. We explored all throughout the cobblestone streets and admired the beautiful nature all around until we had a very filling buffet lunch. We then headed to the Dalí Museum, an exquisite display of Salvador Dalís work and an inside look into his mind.
As I hastily study for finals and finish projects for this last week, the thought that I will be in Barcelona next semester has slowly started to settle into my mind. It's a thought that last year excited me beyond belief and still does today, but the sadness of leaving my friends and missing out on all the fun times they will be having without me is beginning to hit me. I’ve been told that FOMO (fear of missing out) is a real and prevalent thing for students studying abroad but I never thought this would be a problem for me. I just have to keep looking forward to seeing beautiful architecture and landscapes, immersing myself in a historical culture, and trying the most exquisite foods
